This Ranch Cheddar Chicken is the best baked chicken recipe I've ever had! My husband gets grumpy when he goes too long without red meat. He can be such a baby sometimes. Served it up with some home-made potato and sweet potato fries.

  1. Boiled baby potatoes about 10 minutes.
  2. Drained them, cut into halves or quarters.
  3. Add ranch dressing, garlic powder, red pepper powder, salt and pepper, stir them until all mixed well.
  4. Put them on a tray which have already been layered by aluminium foil.
  5. Baked them 400°F or 200°C about 30-35 minutes.
  6. Sprinkle grated cheddar on the top of baked baby potatoes and fold them until melt and all mixed. Garnish with sprinkles chilli flakes and dried / fresh parsley.
  7. For the side dish, spray carrot with canola oil or brush it, season them with salt and pepper (I used Jay's kitchen all purpose seasoning, it turned out much better in flavor) bake them along with the baby potatoes.
  8. For the broccoli, just boil or steam them, season with garlic salt or just salt and pepper.
