  2. Take 4 tbsp oil

  6. Take 1 finely chopped onion
  7. Make ready 4 tbsp finely chopped spring onion

  11. Take 1 tbsp red chilli powder

  16. Make ready 2 tablespoons spring onion
  17. Take 2 tbsp coriander leaves
Instructions to make Baingan Bharta:
  1. First of all, wash eggplants and wipe them. Now apply little bit oil on it and prick them with a knife or a fork so that when they are roasting, the steam can come out. Now on gas stove, put a wire rack and put one eggplant on it. Roast it completely until the skin becomes black. Repeat with another one too. You can even grill them in the oven but roasting gives it a very nice and smoky flavour. Let it cool down a bit and then remove the skin and chop it.
  2. Heat oil in a pan and add mustard seeds. When it crackles, add cumin seeds and hing. Now add finely chopped onion to it and saute it until light pink in colour. Now add spring onion, ginger and garlic paste to it. Cook it for one minute and add turmeric, red chilli powder, cumin-coriander powder, garam masala and salt. Mix everything well and cook it for one or two minutes. Now add finely chopped tomatoes to it and let the tomatoes cook until soft.
  3. Now add prepared eggplant to it and mix it very well. Cook it for 5 minutes on medium heat. Finally add spring onion and coriander leaves to it. Mix it very well and turn off the heat.
  4. Serve baingan bharta with bajra roti or wheat flour roti.
