The word ghee comes from Sanskrit: घृत (ghṛuta-, IPA: ) 'clarified butter', from ghṛ-'to sprinkle'. Mix melted ghee + cooking oil in a bowl and set aside. In a kadai, make sugar syrup of one string consistency.

The ingredients needed to make Ghee pak:
  1. Make ready 1/2 cup Besan Chickpea flour Kadala / / mavu
  2. Take 1 cup Ghee
  3. Get 1/4 cup Oil
  4. Prepare 1 & 1/2 cups Sugar
  5. Prepare 1 tblsp Sugar for sprinkling

It is said to be originated from the royal kitchen of Mysore Palace. Since ghee is the main ingredient, make sure to use good quality ghee. Some add oil along with ghee,but I don't prefer that oil dripping store made Mysore Pak. Ghee Mysore pak is very famous indian sweet recipe which is a delicasy from Mysore region, Karnataka.

Steps to make Ghee pak:
  1. Sift the flour to get rid of the lumps. Keep a tray, greased ready. Place sugar in a heavy bottomed pan, with water enough to immerse it. Say 1 cup of water.
  2. Boil until 1 string consistency.Keep the flame in medium
  3. Add the flour slowly stirring continuously.
  4. Mix and keep oil and ghee ready. Start adding ghee slowly and add continuously like 2-3 tblsp at a time. Keep stirring until the ghee mixes and then add the next batch of ghee and repeat until you finish the ghee.
  5. At one stage, the the colour changes to pale and frothy
  6. Pour it to the greased tray and level it with a spatula. Sprinkle sugar. Wait until warm and cut into desired shape. Let it cool down completely before transferring to the container.

It is a mouth watering recipe made with ghee, besan/gram flour and sugar. There are two versions of mysore pak, one is hard and the other one is soft. The recipe I am sharing today is a bit. the ghee mysore pak recipe is comparatively easier to prepare, yet some tips, suggestions and variations while preparing it. firstly, the quality of the besan does matter a lot to achieve a silky smooth consistency and shape. hence always use fresh besan or chickpea flour for the best outcome. secondly, while mixing the ghee, besan and sugar syrup, keep the flame in minimum or low flame. do. The roux method used in the older version has now been discarded with using roasted besan flour because the roasting is an additional step that goes against its principles. Choose ghee in a glass container with a tight screw-on lid, because this will stay fresh longer than ghee in a plastic container with a snap-on lid.
