  1. Prepare 2 Large portobello mushrooms
  2. Take 1/2 a red onion
  3. Take Large handful spinach
  4. Make ready 2 tomatoes
  5. Make ready Breadcrumbs
  6. Get Grated cheddar cheese
  7. Make ready Dried spices basil & mixed herbs
  8. Prepare Olive oil

Instructions to make Stuffed Mushrooms:
  1. Wash large mushrooms, remove stem by cutting down slightly.
  2. Wash and chop up tomatoes, onion, spinach finely and put into bowl. Mix in herbs and black pepper.
  3. Put oil in pan and cook mushrooms on both sides for few minutes then remove from pan.
  4. Add the mix on top of each mushroom.
  5. Then add breadcrumbs and a little oil on top, then cover with cheddar cheese and place in oven at 180° for approximately 15 minutes.
  6. Serve with mixed salad and potato wedges (optional).
