  1. Take 1 large eggplant
  2. Prepare 2 Fresh tomatoes
  3. Prepare 1 Fresh basil, or fresh ground basil you buy in a tube in the refrigerated section of the produce section
  4. Make ready 1/4 cup mayonnaise I prefer homemade.
  5. Take 1 Fresh sliced mozzarella cheese
  6. Take 3 Egg
  7. Prepare 2 Garlic cloves
  8. Make ready 1/2 cup olive oil/coconut oil, i use one of these choices.
  9. Get 1/2 tsp salt
Instructions to make Eggplant Sandwiches:
  1. Beat eggs in a bowl large enough for you can dip the sliced eggplants in. Add salt.
  2. Cut eggplant into thin circles about 1/8th inch thick. Soak slices in egg bath.
  3. Pour 1/4th cup oil into frying pan reserve rest should you need more as you go along.
  4. Once oil is heated, fry eggplant until golden brown on both sides. About 2mins.
  5. Crush both garlic cloves, mix in with mayo.
  6. Spread mixture onto eggplant like you're making a sandwich.
  7. Cut tomatoes into thin slices place on top of eggplant. Add fresh basil leaf, or basil spread. Cut mozzarella into thin slices, and place over basil.
  8. You may top with another slice of eggplant, and secure it with a toothpick, or serve as is, open faced.
