Ndumas (arrow roots / taro) in this video recipe are stuffed with mince meat and this gives them a pleasant twist. This fried egg masala curry is so creamy. Sometimes called a starch and other times a powder, arrowroot is more desirable as a thickener than often- genetically engineered (GE) flour, cornstarch or rice. Completely safe and with no side effects.
Instructions to make Masala nduma/ arrowroots:
- Peel the arrowroots, wash, cut into desired pieces and boil to softed.
- After boiling, drain all the watet and set it aside. Meanwhile heat up cooking for deep frying the ndumas
- Deep fry the ndumas till they become crispy. Drain the oil and set aside
- In a saucepan, fry the onions and tomatoes. Add in the tomato paste and all the spices and soysauce and stir to mix well
- Add in the 3 tablespoons of water to form a paste
- Add in the dhania, stir well. Let it cook for 1 min. Serve and enjoy
- Add in the deep fried ndumas slowly as you make sure they are coated in the paste
