- Wash Palak leaves nicely and put into a mixer grinder jar and add Palak leaves, Adarak and Green chillies and blend to make a smooth paste and keep aside.
- Now in a big bowl mix wheat flour, suji, all-purpose flour, chilli flakes, salt, asafoetida, cumin seeds, oil, carom seeds and add Palak Chilli paste and Knead the hard dough. Cover and keep aside for 15-20 minutes.
- After some time Knead the dough again and make small ball of equal sizes.
- Take one ball and roll it in circle or triangle(like porato) shape or both the shaoes greasing the rolling pin and board. Similarly roll all the luchai.
- Keep a deep pan at high flame and pour oil for frying, when the oil is hot put luchai in a pan and fry it till golden in in color and flip it and fry from other side.
- Similarly fry all the luchai and serve crispy Palak luchai with green chutney or tomato chutney.
