The ingredients needed to make Moong Dal Vada:
- Make ready 1 cup moong dal with skin
- Take 2+2 green chillies
- Take 4 cloves garlic
- Make ready 1/2 tsp hing/ asafoetida
- Prepare To tsste Salt
- Get 1/2 tsp eno (optional)
Steps to make Moong Dal Vada:
- Wash moong dal and soak it for 3 to 4 hours.
- Drain the water out and divide it into two parts. In one part add salt, two green chillies, garlic and hing. In a mixer jar without adding any water, churn the dal mixture to a paste. Proportion of crushed dal and whole dal can be kept according to personal preferences. But if it is kept half and half, dal vada becomes more crispy and crunchy.
- Now in the crushed dal add whole dal and two chopped green chillies and mix it well. Adjust the amount of salt. Now add eno to this mixture and mix it well. Adding eno is optional but if it is added, dal vada becomes light and fluffy.
- Heat oil on medium to high heat. Now put dal vada with the help with your hand in hot oil. Fry them on medium to high heat until crispy. Prepare all dal vada in the same manner.
- Serve hot dal vada with onion and fried green chillies.
