- Add tomatoes and pepper, stir from time to time though. After about 4 mins, add the salt and stock cube.
- Keep stirring till the sauce is completely soft and separated from the oil. Slowing add the egg in bit; then stir continuously then finally add the bell pepper stir and turn off heat; I enjoy a crunchy bell pepper.
- Serve yam with egg sauce and 2 tbsp of baked beans
