  2. Line the bottom of a glass dish (around 8x8 or 7x10) with vanilla wafers. Pour all of the pineapple mixture over the wafers, and then add another layer of wafers. Spread whipped cream evenly over the top of wafers and then sprinkle with coconut. Top with cherries and refrigerate for at least eight hours before serving.
  3. You can also add passion fruit pulp over the top layer of wafers, my hubby likes it this way but I'm not that fond of passion fruit. I've heard this is originally an Italian recipe but not sure as it was passed on to me a while back from a friend.
